With July 2017 update, we can now finally create multi-select option set in Dynamics 365.
We can also use Existing Global Option Set while defining our Multi Select Option set.
This is how control looks within the form.
Within Advanced Find View
We can use the existing option set client-side methods on Multi Select Option Set.

getSelectedOption() – for new_weekday multiselect option-set with value Thursday and Friday selected –
Hope it helps..

I could find any way to retrieve multi select option set values in Plugins, we might have to wait for next release of the SDK.
Multi Select option set have some limitation as of now(for e.g. You can not use it in your work flows, Business Rules etc).. use it with caution.

By the way, now there is also a flexible alternative to the out-of-box multi select.

It is based on N:N relations & FetchXml, and does not contain “OptionSet related limitations”.
